Ingredients
- 3 lbs loin rib end roast rack (about 6 ribs)
- 3 tbsp paprika
- 1 tbsp garlic powder
- 2 tsp dried oregano
- 2 tsp thyme
- 1/2 tsp salt
- 1/2 tsp white pepper
- 1/2 tsp cumin
- 1/2 tsp cayenne
- 1/4 tsp nutmeg

Instructions
- Place pork roast in a shallow pan. Combine all seasonings and rub well over all surfaces of roast.*
- Roast pork at 325º for about 11/2 to 13/4 hours or until meat thermometer registers 160º. Remove from oven, cover with foil and let stand 5 to 10 minutes before slicing.
- Serve with corn flecked with chopped red and green peppers and okra.
Recipe Notes
*For more intense flavour, place pork roast in a shallow dish, rub with seasonings, cover and refrigerate several hours or overnight.
