Place pork roast in a shallow pan. Combine all seasonings and rub well over all surfaces of roast.*
Roast pork at 325º for about 11/2 to 13/4 hours or until meat thermometer registers 160º. Remove from oven, cover with foil and let stand 5 to 10 minutes before slicing.
Serve with corn flecked with chopped red and green peppers and okra.

*For more intense flavour, place pork roast in a shallow dish, rub with seasonings, cover and refrigerate several hours or overnight.
