In a large fry pan over medium-high heat, quickly pan-fry pork strips and garlic in oil until lightly browned.
Reduce heat to medium, add vegetables (except tomatoes) and the seasonings. Simmer 4 to 5 minutes, stirring occasionally, until moisture is almost gone.
Stir in broth or wine. Simmer to heat thoroughly. Add tomatoes. Pour pork mixture over pasta, sprinkle with cheese and toss. For best flavor do not overcook pork strips. Serve immediately.
